Tribulant Newsletter provides several email tracking interfaces. You can track subscription rates of opt-in forms, open rates of emails, click tracking through bit.ly. And each one of these is done through a clean interface that's easy to use and understand.

Satollo's Newsletter
Satollo's Newsletter provide some basic analytics. The statistics provided are organized by total clicks, by individual profiles, and by users. Take a look at this screenshot to see what's available:

MailPress has a powerful tracking add-on that attempts to track the open rate, clicks, and other activities pertaining to your emails. Checkout the screenshot below to whet your appetite. Now, if MailPress tracking and analytics works as depicted in this screenshot, I'd say it's got killer tracking features!!
[GWA] Autoresponder Professional
[GWA] Autoresponder is only able to track clicks on links in emails. You accomplish that by specifying a link to track in the "Track" screen. And then using the placeholder for the link (something like {LINK1}) within your email. But you can just use bit.ly if tracking links is all you wanted. And you'd probably get better data with bit.ly.
MeeNews
MeeNews has a statistics module that shows subscribers stats and email interaction stats. Checkout this video for more details.
